Raisin Cookies

Ingredients

75 ml Butter
55 g Caster sugar (2oz)
100 g Soft brown sugar (3 1/2oz)
1 egg Egg (medium)
5 ml Vanilla essence
100 g Raisins chopped (3 1/2oz)
175 g Self-raising flour sieved (6oz; sieve together with the cinnamon and bicarbonate of soda)
2 tsp Ground cinnamon (sieved with the flour and bicarbonate of soda)
½ tsp Bicarbonate of soda (sieved with the flour and cinnamon)
Butter (for brushing the baking sheets)

Make the cookies

Put all the ingredients into a mixing bowl and beat together with a wooden spoon until evenly combined.

Make the cookies

Brush baking sheets with butter, then place teaspoonfuls of the mixture onto the prepared sheets, leaving space between each cookie.

Make the cookies

Bake on the middle shelf of a preheated hot oven until the cookies are set and lightly golden.

Transfer the cookies to a wire tray and leave them to cool.
