One of my favourite fish dishes is salmon. Apart from it being an excellent source of protein and omega-3 fatty acids, it's so easy to cook in the Instant Pot (other pressure cookers are available).
Don't be surprised to see that you set the cooking time to 0 minutes - it will cook the salmon while it's coming up to pressure. Just repeat the exercise after you've added the broccoli.
The soy and ginger dressing is a doddle and you can have a fresh nutritious meal in less than 20 minutes.
You can batch cook 4 servings and keep the leftovers in an airtight container in the fridge for up to 4 days.
Ingredients
Salmon and Broccoli
500 g Salmon fillets (fresh; skin-on or skinless)
Salt (to taste)
Black pepper freshly ground (to taste)
500 g Broccoli cut into florets
250 ml Water (for the pressure cooker)
Honey Ginger Soy Dressing
75 ml Extra virgin olive oil
30 ml Light soy sauce
20 ml Apple cider vinegar (1 tablespoon plus 1 teaspoon)
15 ml Runny honey
1 tbsp Fresh ginger freshly grated
1 cloves Garlic clove crushed
5 ml Toasted sesame oil
To Garnish
Sesame seeds (to garnish) - optional
Spring onion chopped (to garnish) - optional
Steamed rice (to serve) - optional
Method
Prepare the Pressure Cooker
Add the water
Pour the water into the inner pot of the pressure cooker and position the handled trivet inside.
Arrange the salmon
Lay the salmon fillets in a single layer on the trivet. Place them skin-side down when using skin-on fillets, then season with salt and freshly ground black pepper.
Pressure Cook the Salmon
Cook at high pressure
Secure the lid, set the steam release valve to Sealing and select High Pressure for 0 minutes. When the cooking cycle ends, carefully release the pressure immediately.
Make the Dressing
Mix the dressing
Add the olive oil, soy sauce, apple cider vinegar, honey, ginger, garlic and sesame oil to a small jar. Seal tightly and shake until emulsified. Alternatively, whisk everything together in a small bowl.
Cook the Broccoli
Add the broccoli
After the pressure has fully released, open the lid and distribute the broccoli florets over and around the salmon.
Pressure cook again
Replace the lid, return the valve to Sealing and select High Pressure for 0 minutes. Release the pressure immediately when the cycle finishes.
Serve
Plate and dress
Carefully lift the salmon and broccoli onto serving plates. Spoon the honey, ginger and soy dressing over the top, then scatter with sesame seeds and chopped spring onions.
Serve immediately
Serve straight away, accompanied by steamed rice if desired.
