Raisin Cookies
Easy and quick to make in less than 30 mins
Simple raisin cookies made with butter, caster sugar, soft brown sugar, vanilla, cinnamon and chopped raisins.
Ingredients
Raisin Cookies
- 75 ml Butter
- 55 g Caster sugar (2oz)
- 100 g Soft brown sugar (3 1/2oz)
- 1 egg Egg (medium)
- 5 ml Vanilla essence
- 100 g Raisins chopped (3 1/2oz)
- 175 g Self-raising flour sieved (6oz; sieve together with the cinnamon and bicarbonate of soda)
- 2 tsp Ground cinnamon (sieved with the flour and bicarbonate of soda)
- ½ tsp Bicarbonate of soda (sieved with the flour and cinnamon)
- Butter (for brushing the baking sheets)
Method
Make the cookies

Mix the dough
Put all the ingredients into a mixing bowl and beat together with a wooden spoon until evenly combined.

Shape the cookies
Brush baking sheets with butter, then place teaspoonfuls of the mixture onto the prepared sheets, leaving space between each cookie.

Bake
Bake on the middle shelf of a preheated hot oven until the cookies are set and lightly golden.

Cool
Transfer the cookies to a wire tray and leave them to cool.
